Creamy Prawn Pasta with Lime

As autumn leaves fall and the air turns crisp, there’s nothing quite like enjoying a comforting and swiftly prepared meal that warms both your heart and your kitchen. Picture this: a bag of frozen prawns, your trusty ally in the culinary realm, ready to help you create a delectable dish in just 15 minutes. In this season of changing colours and cosy evenings, the quest for fresh prawns can be a challenge, particularly as they often come from far-off locales.

Now, let’s dive into the recipe!

This recipe not only comes together in 15 minutes but also skips the use of cream. While creamy dishes have their charm (take a peek at my Creamy Scallops, Perfectly Round and Sensational to see what I mean), sometimes you crave a dish where the flavors of crunchy, buttery prawns, garlic, olive oil, and zesty lemon shine without being overshadowed by cream or heavy sauce.

Preparing the Ingredients

Let’s take a closer look at the star-studded lineup of ingredients that come together to create the mouthwatering masterpiece known as Prawn Lime Pasta. In this culinary creation, simplicity meets sophistication, and each ingredient plays a vital role in crafting a harmonious symphony of flavours. Here’s what you’ll need:

  • Prawns: These succulent treasures from the sea are the heart and soul of our dish. They bring a delightful crunch and a burst of marine richness to every bite.
  • Garlic: The aromatic and pungent garlic cloves add depth and character to our pasta, infusing it with their savoury essence.
  • Shiitake Mushrooms: Now, introducing the earthy and umami-rich Shiitake mushrooms, these exotic fungi bring an extra layer of complexity to our dish, elevating its flavour profile to new heights.
  • Olive Oil: This golden elixir not only provides a silky texture to the pasta but also serves as the canvas upon which our flavours will dance.
  • Pasta: Choose your favourite type of pasta, whether it’s linguine, spaghetti, or penne. The pasta acts as a vessel to carry the delectable prawns and aromatic sauce to your palate.
  • Lime: The zesty lime is the secret weapon in our recipe, offering a refreshing burst of citrusy brightness that beautifully complements the prawns and garlic.

With these carefully selected ingredients, we’ll create a culinary masterpiece that’s as quick to make as it is delightful to savour. Prepare to embark on a flavour-packed journey as we transform these elements into a harmonious dish that captures the essence of simplicity and sophistication in every forkful.

  • 400 grams spaghetti

  • 500 grams prawns

  • 4 garlic cloves, finely chopped

  • salt & pepper to taste

  • 2 limes cut into wedges

  • 2 tbsps unsalted butter

  • 1 tablespoon olive oil

  • Cook the spaghetti according to package instructions and set aside. (Reserve some of your pasta water for later!)

  • If necessary, add in a spoonful or two of the pasta water that you set aside from earlier, to create a sauce for the pasta.
  • Squeeze the rest of the fresh lime and zest over your dish.
  • Serve with cracked black pepper, flat leaf parsley and a drizzle of olive oil.
