Weekend Brunch | 3 Easy Picnic Sandwiches for Autumn

Are you resting at home for the weekend? Or maybe you’re doing a more casual picnic — just you, a friend, a basket with some sandwiches, and a bottle of Moscato. If that’s the case, let us offer a few ideas for sandwiches, from the sublime yet simple chicken salad and to a tuna – raisin, to an egg salad. Just them in your picnic basket and seat under a tree!

Tea sandwiches have always been our favorite. They’re easy to make, easy to tote, and of course, delicious! Planning a picnic can be tricky. You have to consider the weight, durability, and longevity of everything you pack. Sandwiches are the natural picnic snack choice, but all too often they’re the choice you regret making. Anyone who has had to suffer through gooey tomato run-off and soggy bread knows this to be the harsh reality. Thankfully, not all sandwiches are created equal. There are sandwiches that ideal for picnic munching. Not only do these sandwiches stand up to the rigors of traveling, they also improve the longer they sit.

The 3 simple recipes that we are gonna share with you are Chicken Salad Tea Sandwich, Tuna Tea Sandwich with Raisin and Egg Salad Tea Sandwich.

Chicken Salad Tea Sandwich has golden raisins bursting in each bite. The addition of golden raisins adds a refreshing flavor and texture that transforms an ordinary chicken salad mixture to something really special.  A great variation for this recipe is to make it a low-fat recipe by using  a sour cream with mayonnaise.  I know you will love adding this tea sandwich to the menu at your next tea party.

Ingredients |

  • 1/4 cup plus 1 tablespoon mayonnaise
  • 1/4 cup plus 1 tablespoon sour cream
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped green onion
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Pinch garlic powder
  • 2 cups finely chopped cooked chicken/ tuna
  • 1/4 cup golden raisins
  • 1/4 cup toasted sliced almonds
  • 10 slices white sandwich bread
  • 1/2 cup thinly sliced cucumber
  • Garnish: thinly sliced cucumber, chive

Methods|

In a large bowl, stir together mayonnaise, sour cream, parsley, green onion, tarragon, dill, lemon juice, salt, pepper, and garlic powder. Add chicken, raisins, and almonds, stirring to combine.

Spread a thick, even layer of chicken salad onto 5 bread slices. Evenly divide cucumber slices among bread slices. Top each with remaining bread slice. Using a bread knife, cut crust from bread; discard. Cut each sandwich into 3 rectangular shapes.

Garnish each tea sandwich with thinly sliced cucumbers, or wrap each with a chive, if desired.

Tuna Tea Sandwich with Raisin are very recipes are very similar to Chicken Salad Tea Sandwich. Just simply replace 2 cups of chicken with 2 cups of can tuna. Compared to chicken salad tea sandwich, it have a much mild and refreshing taste.

Lastly for non-meat eater Egg Salad Tea Sandwich will be the best choice for you! These egg salad tea sandwich always appear to be the first things eaten at picnics. Packing all of that zesty flavor between two slices of bread is sure to bring new life to the ordinary egg salad sandwich. A warm, lightly toasted roll is the perfect compliment to the smooth and creamy egg salad. The little crunch from the sweet relish and a little sprinkle of paprika pull it all together. Comforting, filling and delicious!

  • 6 eggs, hard boiled and peeled
  • 1/4 cup chopped green onion
  • 3 Tbsp Dijon mustard
  • 1/3 cup mayonnaise
  • 1/4 teaspoon paprika
  • 1/4 teaspoon curry powder
  • Salt and black pepper to taste

Methods|

Chop the eggs coarsely and put them into a large bowl. Add the green onion, celery, red bell pepper.

In small bowl, mix together the mayo and mustard. Gently stir the mayo dressing into the bowl with the eggs and vegetables. Add paprika, curry powder and salt and black pepper to taste.

Spread a thick, even layer of chicken salad onto 5 bread slices. Evenly divide cucumber slices among bread slices. Top each with remaining bread slice. Using a bread knife, cut crust from bread; discard. Cut each sandwich into 3 rectangular shapes.

Best served chilled.
